Greek Turkey Burgers with Zesty Avocado Sauce – I think you might’ve figure out by now I’m eager to try new things. What may be less obvious is, I’m always looking for great-tasting recipes with a healthy kick. I was inspired by Chobani’s #MadeWithChobani project to create something new, but I wasn’t sure which direction to go.
The only thing I’d ever used yogurt in is smoothies and while I have a super tasty recipe for one I’ll share another day, using that for the #MadeWithChobani project seemed rather boring and uninspired. I could’ve looked through any one of my Pinterest recipe boards, but I didn’t need to. I also have a rather large email folder where I’ve been emailing myself recipes that look/sound fabulous. Several have been flagged for quite some time and one keeps jumping out at me – chicken souvlaki with tzatziki sauce, but that has already been done to death so I thought I’d whip up a Greek-style turkey burger and slather on a sauce made with my all-time favorite fruit, avocado. What I came up with turned out so delicious, my mouth wanted to eat two of these gorgeous sandwiches, but my belly was stuffed after one! 😊
Greek Turkey Burgers
- 1 lb. ground turkey
- 1/2 tsp. fresh lemon zest
- 1 tsp. minced garlic
- 1 tsp. dried dill
- 1/2 cup packed Greek Oregano sun-dried tomatoes, chopped
- 1/4 red onion, diced
- 1 large handful fresh baby spinach, chopped
- 1 tsp. dried oregano
- 1/3 cup crushed croutons or seasoned panko
- 1 lg. egg
- Dash sea salt & fresh milled pepper
Zesty Avocado Sauce (16 servings @ 1 tbsp.):
- 1 cup Greek yogurt, plain 4% milkfat (to save calories & fat, use 2% or fat-free)
- 1 Hass avocado, peeled and deseeded
- 1 tsp. jarred minced garlic
- Pinch of fresh lemon zest
- 1/2 tsp. fresh lemon juice
- 1 tsp. dill
- Dash sea salt
- 1/4 tsp. fresh milled pepper
- 4 tbsp. Boursin Light Cheese Spread or Laughing Cow
- 1/2 small cucumber, sliced thin
- 4 hamburger buns, lightly grilled
Zesty Avocado Sauce:
In a small bowl, combine the all the ingredients. Use a fork to roughly smash the avocado against the side/bottom of the bowl. Leave it a little chunky to get some great tasting bites of avocado. Chill in fridge while preparing the turkey burgers.
Greek Turkey Burgers:
In a food processor, whiz about 1 cup of croutons until fine crumbs or place in a freezer strength zipper bag and crush with a rolling pin. Remove from processor and place 1/3 cup in a medium-sized mixing bowl.
Next whiz a large handful of baby spinach or finely chop with a knife and add to the bowl.
Add in the rest of the burger ingredients and combine with your hands or a stiff spoon.
Divide into 4 equal patties and cook on an indoor grill or large frying pan lightly sprayed with oil. The centers should no longer be pink, the juices run clear, and the internal temp reach 165°F.
Place each burger on a lightly toasted bun, top with 1 tbsp. of the Boursin cheese spread, a few slices of cucumber, and 1 tbsp. of the Zesty Chobani Avocado Sauce.
Serve with a nice salad.
To save calories and carbs, eat without the bun.
