  • 1 tbsp CC's Greek Seasoning Blend
  • 1/2 tsp. fresh lemon zest
  • 1/2 cup packed Greek Oregano sun-dried tomatoes chopped
  • 1/4 red onion finely diced
  • 1/3 cup crushed croutons
  • 1 organic pasture-raised egg
  • 1/2 tsp salt
  • 1/2 tsp pepper

Zesty Avocado Sauce (16 servings @ 1 tbsp.):

  • 1 cup Greek yogurt plain 4% milkfat (to save calories & fat, use 2% or fat-free)
  • 1 whole Hass avocado peeled and deseeded
  • 1 tsp. jarred minced garlic
  • 1/2 tsp. fresh lemon juice
  • 1 tsp CC's Greek Seasoning Blend
  • 1/4 tsp pepper
  • Pinch of fresh lemon zest
  • pinch of salt

Optional toppings:

  • Pepperidge Farm Hearty White burger buns, lightly toasted
  • Boursin or Laughing Cow cheese spread optional
  • Baby organic spinach
  • Sliced organic tomato thinly sliced
  • Sliced organic cucumbers thinly sliced
  • Sliced red onion thinly sliced

Instructions

Zesty Avocado Sauce:

  • In a small bowl, combine the all the ingredients. Use a fork to roughly smash the avocado against the side/bottom of the bowl. Leave it a little chunky to get some great tasting bites of avocado. Chill in fridge while preparing the turkey burgers.

Greek Turkey Burgers:

  • In a food processor, whiz about 1 cup of croutons until fine crumbs or place in a freezer strength zipper bag and crush with a rolling pin. Remove from processor and place 1/3 cup in a medium-sized mixing bowl.
  • Next whiz a large handful of baby spinach or finely chop with a knife and add to the bowl.
  • Add in the rest of the burger ingredients and combine with your hands or a stiff spoon.
  • Divide into 4 equal patties and cook on an indoor grill or large frying pan lightly sprayed with oil. The centers should no longer be pink, the juices run clear, and the internal temp reach 165°F.
  • Place each burger on a lightly toasted bun, top with 1 tbsp. of the Boursin cheese spread, optional toppings and Zesty Avocado Sauce.
