Easy Apple Pie – It’s harvest season! Everything seems to revolve around apples and pumpkins at this time of year. And if there isn’t any apple or pumpkin in the food, it might be liberally imbued with cinnamon, nutmeg, and cloves! 😃 This easy to make “pie” tastes like autumn and is perfect for those who either can’t or don’t want to make a pie crust. I’ve been making it for over 20 years and it’s never failed to disappear from the pie plate.


I know the making of a good crust is easy for a lot of people, but my attempts have been a dismal failure so far. Moreover, it’s easier to just buy a ready made crust. I know they don’t taste as good. My Grandma Dorothy’s were the best! To that end, I do plan to work on my crust-making skills in the future. But for now, this is a yummy dessert that doesn’t need a crust and is a great way to use up apples rolling around on the counter. Super yummy eaten warm with a nice plop of vanilla ice cream on the side. 😊

Easy Apple Pie

The pictures show the ingredients for an 8″ pie in a 9″ plate. I wasn’t thinking when I started making it and it was too late to switch plates after I’d poured on the batter. Not sure what kind of apples are best for baking? Here’s the lowdown. However, my favorite for eating is the new Jazz or Honeycrisp. That’s not to say I wouldn’t use them in making this pie or any other baked dessert. Though some apples like the old fashioned varieties are better for making applesauce and apple butter. But in a pinch, any apple will do. 🍎🍏

Easy Apple Pie

For an 8″ pie:

5-6 small apples (or 3-4 large), peeled and sliced into 1/4″ wedges
1 tbsp. cinnamon + 2 tbsp. sugar, mixed together to sprinkle
2/3 cup flour
1 cup brown sugar, firmly packed
1 tsp. vanilla
1 egg, beaten
1-1/2 sticks melted butter

Preheat oven to 350ºF.

Spray pie plate with cooking spray or grease with butter. Lay the sliced apples in the pie plate. You can lay them in a pretty pattern if you want. Sprinkle with sugar and cinnamon.

In a medium bowl, mix the flour, brown sugar, butter, and beaten egg. Pour evenly over the apples. It will ooze down into the crevices as it bakes.

Bake for 45-55 minutes or until lightly browned and the center is set.

Cut into wedges and serve with a dollop of vanilla ice cream.
