Lawn Mower Salad – My sister introduced us to this awesome salad (in my mind it’s actually a slaw) many years ago at a family gathering. Warmer weather means many opportunities for cook-outs. This cool, crisp side is the perfect accompaniment. The ingredients may sound weird, but you’ll love it! Trust me! It’s perfect for doubling and taking to pitch-ins for work, church, family reunions, etc. Ramen noodles, cashews, and a sweet & sour dressing gives Lawn Mower Salad an Asian flare.

Lawn Mower Salad
- 2 (3 oz.) pkgs. ramen noodles – chicken flavored
- 1 16 oz. bag broccoli slaw or coleslaw (in the produce section)
- 6 green onions thinly sliced, including tops ( I always omit this)
- 1/3 cup canola oil
- 1/3 cup sugar
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 cup coarsely chopped cashews
- 1/4 toasted/salted sunflower seeds
Crunch up the ramen noodles in the sealed package. Carefully open and take out the seasoning packets. Combine the seasoning packets, sugar, oil, vinegar, and water in a large bowl, whisking until sugar dissolves. Add slaw and green onions (if desired). Add the crunched up noodles to the slaw mixture and toss to coat. Cover and refrigerate 6 hours or overnight. Stir in the cashews and sunflower seeds right before serving.
I love the nuts after they’ve been soaking in the salad so you can add them right after it’s made if you prefer. I have no idea how many calories there are per serving, but I cut down the oil and sugar from 1/2 cup to a 1/3 each so it has to be a tad bit healthier. 😉
