Healthy & Delicious Egg Ham and Cheese Casserole is super low fat but tastes like the most fat laden breakfast delight ever! I have many keto (ketogenic) diet recipes on the site, but no matter how many times I try to get into ketosis, it never works. I believe this is because my liver is it too busy processing all the prescription meds I’m on. I can imagine that overworked organ raising its fist at me for asking it to do one more thing. Imagine my surprise when my health insurance company contacted me to offer free WW through Solera Health! 😃

Amazingly, I lost 20 lbs in the first 3 months on the WW Blue Plan, but I felt very deprived and I knew it was only a matter of time before I fell face first into a mountain of buttery mashed potatoes. WW has revamped its ZeroPoint food lists yet again so it looks like the 3 different colored plans are so last year. Now, answering a series of questions in the app generates a plan customized for each member. Since the foods I’m allowed for free may not be the same ones for you, checking the ingredients in recipes is a must if you want to stick to a WW point plan. For everyone else, eat what you know is good for you! It’s not that difficult to know by a recipe’s ingredients.

From the beginning of my WW journey in April 2021 to February 2022 it’s been a struggle to remain committed. That’s how it goes on any healthy eating plan for me. I’d been so geared to keto eating when not hearkening back to the fabulous old-fashioned recipes I grew up with that I struggled to find WW foods that taste as incredible as my recipes. (I never had to watch my weight before I had babies.)

I now know exactly what I have to do. It will take years, but I have to convert all of my recipes to low-fat, whole wheat, low-calorie without losing the great flavors. Here’s my new go-to for the mornings. I’m definitely NOT a morning person so this is perfect to just grab a square from the fridge and zap while my Keurig coffee pours. 😋

Healthy and Delicious Egg Ham and Cheese Casserole

Note: Sara Lee Delightful white or wheat bread is super low calorie. You can use spray butter or a scant amount of Imperial margarine if you’d like a bit of toast with your Egg Ham and Cheese Casserole.

  • 12 eggs, free range is better
  • 1 cup non-fat Greek yogurt
  • 12 oz shredded fat-free mozzarella cheese
  • 1/2 cup unsweetened almond milk
  • 2 cups lean cubed ham or turkey sausage (pre-cooked) or Hormel 97% fat-free bacon bits
  • 1/2 – 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 – 1 tsp Accent (msg), optional

Optional Add-ins

  • Fresh spinach
  • Diced onion
  • Diced red and/or green bell peppers
  • Fresh sliced mushrooms
  • Hot sauce

Blend the eggs, yogurt, mozzarella, salt and pepper.

Evenly spread meat and optional veggies in the bottom of a 9×13 casserole dish sprayed with oil.

Pour the egg mixture over all as evenly as possible.

Bake at 375°F for 35-40 minutes, or until center is just set. Don’t overbake! Each piece will further cook when reheating in the microwave.

Refrigerate leftovers. Reheat servings in microwave for 25-35 seconds.

    • Thank you and yes! However, finding fat free mozzarella isn’t always easy. Sub in part-skim and it will only add a smidgen more in calories. And sub fat free sour cream (if you can find it) or light sour cream if you’re out of Greek yogurt. 😋💕
