Last Friday before grocery shopping I racked my brain and poured over Pinterest posts. I searched high and low for something new and yummy to make for lunch for a crafting day. My usual Crock Pot Breakfast Casserole (minus the potatoes) kept coming to mind for its ease and simplicity. In short, something altogether special happened when I combined the ingredients I had on hand. Cheesy Meaty Keto Quiche was born!
Slow Cooker vs. Toaster Oven
Rather than dealing with the slow cooker since I’m a serious procrastinator, I planned to use my wonderful toaster oven. I bought it specifically because a 9×13 pan can fit in it.
Here’s how the Cheesy 3-Meat Keto Quiche came together…
I started throwing eggs and meats together with wild abandon… LOL Just joking. 😄 That is to say, I carefully cracked the eggs into a large mixing bowl and added the cream, cheese, salt, and pepper. For the Cheesy Meaty Keto Quiche, use these three packaged items below if you want yours to taste exactly the way my guys loved it!

Cheesy 3-Meat Keto Quiche
12 cage-free, antibiotic-free eggs
2 cups shredded fiesta mix cheese
1 lb. pkg. Eckrich Smoked Sausage, cut lengthwise then diced
1 bag Jimmy Dean Fully Cooked Original Sausage Crumbles
1 cup Smithfield Smoked Diced Ham
½ cup heavy whipping cream
½ tsp. salt
½ tsp. pepper
Preheat oven to 350F. Spray or butter a 9×13 baking dish.
Fork whip the eggs in a bowl big enough to hold everything.
Add the cheese, meats, cream, salt, and pepper. Mix well.
Pour into pan and bake for 45-60 minutes. Check the center for doneness with a knife.

To sum up in an eggshell, this low carb, high protein dish is great for breakfast, brunch, lunch, dinner, lupper, or supper. Really delicious for snack time, too! Happy eating! 😋
