CC’s Italian Fried Chicken is deliciously keto/low carb and easy to whip up with help from CC’s Creamy Italian Dressing. Moreover, pair it with Browned Butter Roasted Vegetables and you’ll think you’ve died and gone to heaven!😍
Boneless-skinless chicken breasts are seared on both sides then simmered in this CC’s Creamy Italian Dressing. Easy and crazy delicious! Jimmie’s not a huge fan of any kind of chicken, but he loves this Italian “Fried” Chicken. I love knowing there are no preservatives or additives in this meal and it meets the guidelines for several different clean eating lifestyles.

CC’s Italian “Fried” Chicken
Ingredients
- 4 boneless/skinless organic chicken breasts butterflied & cut through
- 2-3 tbsp. organic lard beef tallow, or extra virgin olive oil
- 2 cups CC’s Creamy Italian Dressing
- Salt & pepper
Instructions
- Cut away as much fat as possible from the chicken breasts.
- Over medium-high, heat olive oil in a large frying pan (cast iron works great). Lightly salt and pepper chicken breast halves on both sides. Sear off every piece until nicely browned on both sides.
- Pour CC's Creamy Italian dressing over all the seared breasts in the frying pan and turn to coat. Add extra for a saucy gravy.
- Lower heat to a simmer and cook, turning occasionally, for 15-20 minutes or until the temp in the thickest part of a breast reads 165℉.
- Serve immediately and enjoy!
Browned Butter Roasted Vegetables can be keto/low-carb using brussels sprouts, cauliflower, and/or broccoli. Sadly, carrots have too much natural sugar – unless you save up all your allotted carbs for the day and have them in one sitting. 😁 You don’t have to use browned butter (or even butter) for roasted veg. You can toss them with extra virgin olive oil and they’ll still be great, but not half as divine as what’s pictured. 😋
Back when I posted this recipe in 2017, I was only reading labels for the nutrition facts. Fast-forward to 2023, I woke up to just how toxic our food had become. I’ve updated this recipe to the most wholesome ingredients I can find and now use, including those in CC’s Creamy Italian Dressing made with CC’s Italian Seasoning Blend. What it does to this chicken in the skillet is truly worth taking the time to make your own dressings from scratch and liberally slather it on.
In conclusion, you won’t regret it. 😋
Happy eating! 😊
