Other Ways to Use This Creamy Italian Dressing
This recipe is great as a marinade, dip, and sandwich spread. The tangy-herby taste and creamy texture help tenderize meats, elevate roasted veg, and add a kick to sandwiches.
- Marinade for Meat and Vegetables: The acidity helps tenderize chicken, pork, beef, and shrimp. Moreover, this dressing makes a delicious coating for roasting or grilling veg like bell peppers, zucchini, mushrooms, and broccoli.
- Dip for Raw Veg & Savory Apps: The thick consistency makes it an excellent dip for carrots, celery, and cucumbers. Add to that, it’s surprisingly delightful on pizza rolls, chicken tenders, or wings.
- Sandwich and Burgers: Switch out your same-old mayo or mustard on hoagies, burgers, wraps, and paninis to add a zesty kick.
- Pasta and Grain Salads: Not only is this dressing amazing on lettuce, it’s fantastic on cold pasta, tortellini, or quinoa in salads.
- Finishing Sauce: For instance, drizzle over bruschetta, roasted potatoes, garlic bread, or grilled fish to add a bright, herby taste.
First, gather all the ingredients to make this quick and easy. Then, you can use an immersion (stick) blender, food processor, or a regular blender.
As with all my recipes, change it up to suit your own tastes. For example, less salt, more herbs, or vice versa, whatever pleases your palate. ๐

CC’s Creamy Italian Dressing
Ingredients
- 1-3/4 cups organic extra virgin olive oil
- 3/4 cup white or white wine vinegar
- 1/2 cup water
- 2 organic pasture-raised eggs beaten
- 2 tbsp. CC's Italian Seasoning Blend
- 2 tbsp. minced garlic
- 2 tbsp. grated onion
- 2 tbsp. lemon juice
- 1 tsp. celery seed
- 1 tsp. salt
- 1/2 tsp. pepper
Instructions
- Using a stick blender or regular blender, whiz the eggs to beat them, then add all of the ingredients except the oil.
- Pulse to combine everything.
- Add the oil slowly while running the stick blender, food processor, or blender.
If using as a marinade and cooking sauce:
- Pour into a bottle or jar, cap, and refrigerate until ready to use.
If using as a salad dressing:
- In a 2-quart sauce pot, cook over high heat while stirring non-stop until dressing comes to a boil. This will thicken the dressing. Remove from heat and let cool. If too thick, thin dressing with a little spring water.
- Store in a lidded bottle or jar and refrigerate until ready to use.
- Shake well before serving.
