Old Fashioned Meatloaf – There are probably a gazillion recipes for meatloaf on the internet. Here’s one more. 😋 Just because something’s easy or old-fashioned doesn’t mean it’s not a worthy contender in the supper rotation game. I can call this recipe old-fashioned because I’ve been making it for around 40 years! It always takes me back home to my teens and the wonderful memories of supper at my mom & step-dad’s or supper at my step-mom and dad’s. I don’t recall either of my moms using a recipe and it shouldn’t be at all surprising to find I really don’t follow one either. I just take a little of both mom’s ingredients and throw them together, winging it every time. And my meatloaf always turns out perfect no matter what I put in it.
My step-mom always ringed her meatloaves with potatoes and Jimmie would be very disappointed if I stopped doing it for some bizarre, inexplicable reason. I see no reason to ever disappoint him. 😊 We prefer the canned whole potatoes in this dish. They’re perfectly tender every time and the roasted ketchup on top makes them especially tasty.
Old Fashioned Meatloaf
- 2 lbs. ground beef
- 2 eggs
- 1 small onion, chopped or 1 tsp. onion powder
- 3/4 cup ketchup, plus extra for the top
- 1 tbsp. mustard
- 1 tbsp. Heinz 57
- 1 tbsp. A1
- 3 tbsp. Worcestershire Sauce
- 1 tbsp. minced garlic, jarred or 1 tsp. garlic powder
- 1/3 cup milk
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 slices cubed white bread OR 1 sleeve crushed saltine crackers OR 1-1/2 cups rolled oats
Optional: Drained canned whole potatoes or peeled/quartered fresh potatoes.
Preheat oven to 375°F. Lightly spray a large (11×15) baking dish or roasting pan.
Mix everything (except potatoes) in a large bowl. I use my hands. Begin forming into a loaf shape in the bowl, then slide/dump the meat mixture into the pan and pat into an oval, tucking the meat up and under around the bottom edge.
Surround the loaf with potatoes then lightly salt and pepper them. Cover top of meatloaf with ketchup and spread to the edges. Squirt more ketchup over the potatoes.
Place in oven and cook for 45 minutes. Remove from oven, cut meatloaf in half and carefully slide it apart a little with a spatula. Baste the potatoes with the pan juices. Return to oven for an additional 15 minutes, or until the meat is cooked through and no longer pink.
Remove potatoes to a serving dish. Carefully lift each half of the meatloaf and place on a platter. Cut into slices and serve with additional ketchup or steak sauce.
I’ve been known to use crushed Doritos, crushed potato chips, or even crushed corn chips in place of the bread or crackers or oats, but bread or oats is what I use most often. And if I happen to have 3 or 4 slices of a really good bread like Pepperidge Farm Hearty White, you won’t believe how good it makes a meatloaf. Also, Heinz Honey Ketchup is the bomb! Honey is far better for your body than high fructose corn syrup or cane sugar.
I usually make a 3 lb. meatloaf to feed my crew and if there’s ever any left over, it makes a great fried sandwich the next day for lunch or supper.
All of the sauce and seasoning amounts are approximate. I don’t actually measure anything, but these measurements are a good guideline.
