Easy Meatball Mini Subs piled with ooey-gooey cheese are the perfect for parties! Only four ingredients and a ton of flavor make them a wonderful weeknight winner, too. I’m all about shortcuts when I’m in a hurry or don’t feel like doing everything from scratch. However, if you have the time and the inclination, you can make homemade meatballs, they’re super simple to do and spaghetti sauce from scratch is, too. 🙂

We love Ragú with Sautéed Onions & Garlic for these, but you can use whichever sauce you like best.
Use whatever shredded cheese blend you think sounds good. Italian blend probably makes the most sense, but I used Colby & Monterrey Jack blend, as well, and they taste awesome.
The leftover sauce and meatballs can be frozen for the next time you want to make these, or refrigerate and use for spaghetti within a week. Microwave from frozen until thawed and piping hot throughout then assemble the hoagies and bake as usual. Or make up extra meatball subs (unbaked), wrap in foil, and store in fridge for up to a week. Remove from foil and microwave or leave in foil and bake in 400°F oven for 15-20 minutes or until cheese is melted and the meatballs and sauce are hot.
Easy Meatball Mini Subs
Note: Do not skip baking the meatballs in the sauce! This step transforms the taste of both the meatballs and sauce!
- 1 (24 oz.) bag frozen meatballs
- 1 (32 oz.) your favorite jarred spaghetti sauce
- 2 cups shredded cheese blend
- 1 pkg hotdog buns
Preheat oven to 400°F.
Spread a thin layer of sauce in the bottom of a 9×13 baking dish or pan. Arrange meatballs in a single layer on the sauce then evenly pour the remaining sauce over all.
Cover with foil and bake for 25-30 minutes or until hot and bubbly.
Lay out the hotdog buns in an oil-sprayed 9×13 casserole dish or a larger jelly roll pan so that they prop each other up. Sprinkle a little shredded cheese in the bottom of each bun, carefully place 3-4 meatballs in a line then top with more or less sauce depending on your preference.
Liberally cover with more cheese then bake 4-5 minutes or until the cheese is completely melted. Don’t over-bake or the buns will become too hard and dry.
Let cool for several minutes. The meatballs, sauce, and cheese will be very hot. Use a spatula to transfer from pan to plate.
If you can pick it up and eat it, great! If not, use a fork. 😋
Use leftover meatballs and sauce on Barilla Ready Pasta or just eat them as is. So delicious!
