Easy Keto Chocolate Chip Cookies are super simple to make and super satisfying! There are lots of recipes on the net for these cookies, but this one doesn’t require a bunch of convoluted steps or special ingredients that cost a small fortune. And they taste great! The coolest thing about this recipe is, you can take the basic ingredients and turn it into a variety of different cookies such as lemon, almond, snickerdoodles, or peanut butter! 🍪

Keto Chocolate Chip Cookies

  • 1 stick of butter, softened
  • 2 cups blanched almond flour
  • 3/4 cup of stevia or monk fruit sweetener (if using semi-sweet chips, add 1/4 cup more)
  • 1 egg
  • 1 ½ tsp baking powder
  • 1 tsp vanilla
  • 1 cup (7 or 9 oz bag) sugar free milk or dark chocolate chips

Preheat oven to 350°F.

Combine all ingredients except chocolate chips until cookie dough forms. Stir in the chocolate chips.

Scoop into walnut sized balls and place on sprayed cookie sheet.

Bake for 8-10 minutes, or until lightly browned.

Alternate flavors without chocolate chips/vanilla extract:

Lemon = 1 tsp lemon extract + 1-2 tsp lemon zest

Almond = 1 tsp almond extract + 2/3 cup chopped almonds

Peanut Butter = 1 tsp vanilla + 1/3 cup more almond flour + 2/3 cup low carb sugar-free crunchy peanut butter

Snickerdoodles = 1 tsp vanilla + 1 tsp ground cinnamon + mix 2 tbsp Swerve granulated with 1 tsp cinnamon. Roll dough into balls then roll in the Swerve/cinnamon mixture. Slightly pressed down balls on baking sheet.
