Hungarian Smoked Sausage and Potato Goulash is a delicious one pot meal! The Old World flavors of this dish is a delightful treat for the taste buds! Add a slice of your favorite bread slathered in butter to sop up any paprika-y gravy!

Hungarian Smoked Sausage and Potato Goulash
- 1 tbsp oil
- 1 pkg smoked sausage, sliced
- 4 tbsp salted butter
- 1 onion, thinly sliced
- 3 tsp jarred minced garlic
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp paprika
- 3 lbs red-skinned potatoes, rinsed and dried then sliced
- 2 (15 oz) cans chicken broth or stock
- 1 tbsp dried parsley or 1/2 cup fresh chopped
Heat oil in a Dutch oven or 15″ deep sided iron skillet over medium-high. Add sausage and brown both sides. The deeper the color, the better the caramelization. But don’t burn. Remove the sausage from the pan with a slotted spoon.
Add the butter and onions. Saute 5 minutes or so then add the garlic. Lower heat to medium and continue cooking until onions are nicely caramelized.
Add the paprika. Stir to coat the onions then add in the sliced potatoes, salt, and pepper. Stir to coat.
Add the chicken broth. Cover and cook for 15 minutes.
Remove lid, add in sausage, and continue cooking for 5-10 minutes or until the potatoes are fork tender but not falling apart.
Add more seasonings to taste. Sprinkle each serving a bit more parsley.
