Keto Stuffed Mushrooms with Clams
- 2 pkg whole baby bella mushrooms
- 1 (6 ounce) can clams (drained and finely minced)
- 1/2 tsp onion powder
- 1 egg (beaten)
- 1⁄2 teaspoon minced garlic
- 1 tsp oregano
- 1/2 cup dry grated parmesan reggiano cheese
- 1/2 stick melted salted butter
- 1/2 tsp pepper
- 1/4 tsp salt
- 1 cup finely shredded mozzarella cheese, divided
- Olive oil for drizzling
Preheat the oven to 375°F.
Mix together the clams, egg, herbs and seasonings, melted butter, grated Parmesan reggiano cheese, and a 1/4 cup of the mozzarella.
Place about a heaping teaspoon of stuffing in each mushroom cavity and slightly mounded.
Lightly drizzle with olive oil over all. Top each with a little pile of shredded mozzarella.
Bake for 25-30 minutes.
