Keto Stuffed Mushrooms with Clams is wonderfully low carb at only 2g net carbs per serving and they taste fantastic! Perfect to serve at a party or regular weeknights! These are also gluten-free with no bread crumbs or ingredients with hidden gluten. 😊

I love mushrooms! And it turns out they’re extremely good for you! Some varieties are more powerful than others, but all have extraordinary health benefits when eaten at least 2x per week. My most favorite way to eat pizza these days is with mushrooms and extra mushrooms! 🍕😋

Keto Stuffed Mushrooms with Clams

  • 2 pkg whole baby bella mushrooms
  • 1 (6 ounce) can clams (drained and finely minced)
  • 1/2 tsp onion powder
  • 1 egg (beaten)
  • 1⁄2 teaspoon minced garlic
  • 1 tsp oregano
  • 1/2 cup dry grated parmesan reggiano cheese
  • 1/2 stick melted salted butter
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1 cup finely shredded mozzarella cheese, divided
  • Olive oil for drizzling

Preheat the oven to 375°F.

Wipe the dirt from each mushroom or quickly rinse and pat dry. Pop the stems out and save to use in a stew or soup.

Mix together the clams, egg, herbs and seasonings, melted butter, grated Parmesan reggiano cheese, and a 1/4 cup of the mozzarella.

Place about a heaping teaspoon of stuffing in each mushroom cavity and slightly mounded.

Lightly drizzle with olive oil over all. Top each with a little pile of shredded mozzarella.

Bake for 25-30 minutes.
