This Keto Cheeseburger Casserole Deluxe is one of those recipes that can be made to suit your own tastes. If you don’t have a specific ingredient, substitute what you have on hand. The first time I made it with a Mexican blend cheese it was delicious, the second time with American cheese slices, and the third with straight up mild cheddar. Today’s version has mozzarella. ๐
I love them all, but this one has to be my favorite so far. The big slices of fresh crimini (brown) mushrooms gave me an idea for my next Keto Cheeseburger Casserole creation – swiss and brown gravy! Who doesn’t love a good mushroom and swiss burger like those found in restaurants! Change up the cheese (swiss is stronger so maybe use only half called for in the recipe below) and leave off the tomato, lettuce, and pickles. Don’t forget to top with a little mayo and then the gravy!
This recipe idea came to me from Ketonian Nerd, Roberta! She brought it over for our crafting day lunch several months ago and it quickly became one of our easy go-to ketogenic diet meals. This is deliciously filling for the last meal before a good intermittent fast, too! ๐
