Super Moist Banana Bread – Jimmie came up with this recipe after experimenting with other recipes over the years. I had never been particularly fond of fruit breads because they always seemed to be too dry and not sweet enough. I love this one every time he makes it! And I love his sister Carol’s Super Moist Apple Bread. They’re both incredible!

Super Moist Banana Bread
- 3 very ripe bananas, peeled & mashed
- 1 stick butter, super softened
- 2 large eggs
- 3/4 cup brown sugar
- 1 tsp. vanilla
- 1 1/2 cups unbleached flour
- 1 tsp. baking soda
- 1/2 tsp salt
- 2 tbsp sugar blended with 1 tsp cinnamon for sprinkling on top (optional)
Whisk the bananas, butter, eggs, sugar, and vanilla. Mix in flour and baking soda.
Scrape into a bread pan sprayed with oil. Sprinkle top with sugar/cinnamon mixture.
Bake in preheated 350°F oven for 55-70 minutes. When toothpick inserted in center of crusty part of top comes out clean or with a crumble or two, it’s done.
Let cool enough to slice and handle. Slather with butter!
Store in refrigerator for up to a week. Warm slices in microwave before eating, if desired.
