Autumn Apple Crunch Cake

Autumn Apple Crunch Cake was inspired by a fabulous dessert my sister makes called Pumpkin Pie Crunch that I love! I make one called Gooey Pumpkin Butter Cake. I had an idea to kind of marry the two, minus the pumpkin, add apple and jack up the crunchy topping. Autumn Apple Crunch Cake is born! It tastes even more fantastic than I imagined it would! I haven’t tried Peach Crunch Cake yet, but I bet it will be equally scrumpdillyicious. 😊

Autumn Apple Crunch Cake

Crust

  • 1 pkg yellow or white cake mix
  • 1 egg
  • 1 stick butter, melted

Filling

  • 1 can apple pie filling
  • 1 pkg cream cheese, softened
  • 1 stick butter, melted
  • 2 cups powdered sugar
  • Cinnamon to sprinkle on top of this layer

Streusel Topping

  • 1 stick cold butter, cut into small cubes
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1 cup chopped pecans
  1. Preheat over to 350°F.
  2. In a large bowl, beat cake mix, butter, and egg on low/medium until well blended. Press dough into a 9×13 baking dish.
  3. In the same bowl, blend the cream cheese, melted butter, and powdered sugar on low/medium until well blended. Stir in the apple pie filling. Spread evenly over cake mix layer.
  4. In another bowl, using a pastry blender or two forks, cut the cold butter into the brown sugar, flour, cinnamon, and chopped pecans. Using your fingers, plop little clumps all over the top of the apple cream cheese layer.
  5. Bake for 45-55 minutes, or until set and top is golden and crunchy. Don’t over-bake!
  6. Serve warm or chilled. Refrigerate leftovers.

The streusel topping with chopped pecans is the perfect amount of cinnamony crunch and the cream cheese apple pie layer the perfect amount of gooey-ness. Add those layers to the cookie-like bottom crust and the whole dessert is to die for! 🤗 Give it a try and see what you think. Have a fresh pot of coffee on hand – this sweet apple treat is so incredibly decadent, it needs no whipped cream or ice cream on the side! Be careful though, or you might find yourself standing over the whole pan with a fork in hand. 🤭
