Organic French Onion Soup is quick and simple with just a handful of wholesome ingredients. It doesn’t take hours to achieve that rich broth and sweet melt-in-your mouth onions. Top with homemade organic croutons and deliciously melty cheese. You can microwave or brown in the oven, but I recommend never wasting a single strand of ooey gooey cheese by draping it over the rim of the bowl. Then you run the risk of looking like a hillbilly when you try to gnaw the cheese off the rim! 😂

There’s a very good reason for not using one big piece of toast to suspend the cheese. It’s far too difficult to cut through it with a spoon to take a reasonable bite. 🤭 It never fails, I eat half the cheese and half the toast in one very unladylike bite with broth running down my chin. Not an attractive look. 😂
I make croutons from scratch – the bread, too, like my Organic Rye Bread – from as many organic ingredients as I can. Though every crouton rendition I’ve made tastes great, the simplest tastes best in this Organic French Onion Soup. Too many flavors in the croutons takes away from the delicious taste of the beefy, oniony goodness.
When I’m trying to be super low-carb/keto, I’ll use Arnold Keto Bread to make the croutons for this soup and all my other soups and bisques I love croutons in. They taste great, too, but they’re not organic. I’m usually trying to save carbs wherever I can, even if the soup or salad isn’t low carb.

Easy Organic French Onion Soup
Ingredients
- 2 large organic onions thinly sliced or diced
- 4 tbsp organic butter
- 6 cups organic beef broth
- 1 tbsp organic minced garlic optional
- 1-2 tsp Better Than Bouillon Organic Beef Base optional (taste before adding)
- Hain Iodized Sea Salt or Himalayan Pink Salt, to taste
- Pepper, to taste
- homemade organic croutons for topping
- gruyere, provolone, or mozzarella cheese or a combination, for topping
Instructions
- Sauté the onions in the butter over medium heat to desired caramelization, stirring frequently, 10 minutes or so. Add a sprinkle of salt to help the onions sweat out moisture. Add the optional garlic and sauté for another minute
- Add the broth and optional beef bouillon base. Stir well then taste before adding more salt. Pepper to taste.
- Bring to a boil over high heat, then reduce to medium and let simmer for 10-15 minutes to concentrate the flavors.
- At this point, you can pressure can into pint or quart jars following manufacturer instructions or your canner.
- To serve, add croutons on top of the onion soup to suspend the cheese(es) – as much or as little as you like.
- Microwave on high for 2-3 minutes until cheese is melted. Or place on a baking sheet under the broiler in the oven and broil for 1-2 minutes to desired browning, depending on your oven. Watch closely to keep from burning. Carefully remove from the oven with potholders or mitts.
- Place on a plate to serve as the bowl will be quite hot.

I’ve eaten French onion soup at a lot of restaurants, mom & pop places and chains. The best for the price has to be at Applebee’s. We don’t live close to one anymore, therefore making it is a must if I want to indulge. I have to say, in all honesty, mine is better!
