Cuisine American
- 1 lb Dried navy beans (or whatever your favorite dried bean)
- 1 lb Cubed ham or a leftover ham bone or 1 ham bouillon packet
- 1 Yellow or white onion, diced
- Water
- 3 tbsp + 1 tsp Salt
- 1/2 tsp Pepper
Soak the beans overnight up to 24 hours in a bowl or pot of water. Cover by at least 2-3 inches of cold water and 3 tbsp of salt.
Drain and rinse the beans. Put in a Dutch oven or other heavy lidded pot that fits in your oven. Cover the beans with 4-5 cups of water. Add ham, onions, 1 tsp of salt, and 1/2 tsp black pepper.
Cook in oven 2-3 hours, or until the beans are tender and to your liking. Check the liquid halfway through. For thicker beans, use less water. For soupy beans, add a little more.
Serve over buttered sweet corn muffins or old-fashioned corn cake.
