Bláithín's Irish Organic Yeast Bread

The beautiful simplicity of these organic ingredients come together to make a deliciously wholesome loaf of bread. Perfect for sandwiches, toast, croutons, garlic bread, or just slathered with butter.

Instructions
 

  • Add 1/4 teaspoon of sugar to the warm water and add the yeast. Stir and leave to activate while mixing the dry ingredients together.
  • Sieve flour into the large bowl of a stand mixer.
  • Add a teaspoon each of salt and sugar.
  • Rub in butter.
  • Add water/yeast and egg to the dry ingredients and using a dough hook, mix for 5 minutes. (Sometimes you might need to add a little flour here if dough looks very sticky/wet).
  • Remove dough and bring together on a floured surface.
  • Put into a bread tin and leave somewhere warm for 1hr 15 mins. (Do not cover.)
  • Bake in preheated 400°F oven for 30 minutes.
  • Let cool before slicing (or serve warm with your choice of topping). Store in a bread box, bread bag, or lidded container.
  • Use within 3-4 days. Does not last as long as commercially made breads with preservatives without molding.

Notes

To make bread flour out of all-purpose flour, remove 1 1/2 teaspoons of flour for every cup and replace with 1 1/2 teaspoons of vital wheat gluten. Or substitute the vital wheat gluten with baking powder. Sift well.
