Garlic Home Fries
Great with breakfast, brunch, or dinner!
- 3 tbsp light olive oil
- 4 pcs bacon, cut into small pieces
- 1 onion, thinly sliced
- 4-6 potatoes, cut into bite-sized pieces
- 3 tbsp Weber Roasted Garlic & Herb Seasoning, to taste
- 2 tbsp paprika
Cook bacon pieces in oil over medium-high heat until almost done. Add onions and saute for a few minutes.
Stir in potatoes and seasonings. Reduce heat to medium and fry on one side without disturbing for 10 minutes.
Scrape potatoes up from the bottom of skillet and flip over. Fry on other side for about 10 minutes or until the potatoes are tender.
Preheat to 425°F. Line a large jellyroll pan with aluminum foil.
Scatter bacon pieces and cook in oven until 3/4 done, about 15 minutes.
In a large bowl, toss onions, potatoes, and seasonings with oil. Spread around with bacon on the baking sheet.
Bake for 25 minutes. Remove from oven and carefully flip over. Continue baking another 15 minutes or so until potatoes are tender and crispy.
