Garlic Home Fries

Ingredients

  • 3 tbsp light olive oil
  • 4 pcs bacon, cut into small pieces
  • 1 onion, thinly sliced
  • 4-6 potatoes, cut into bite-sized pieces
  • 3 tbsp Weber Roasted Garlic & Herb Seasoning, to taste
  • 2 tbsp paprika

Instructions

Skillet Directions

  • Cook bacon pieces in oil over medium-high heat until almost done. Add onions and saute for a few minutes.
  • Stir in potatoes and seasonings. Reduce heat to medium and fry on one side without disturbing for 10 minutes.
  • Scrape potatoes up from the bottom of skillet and flip over. Fry on other side for about 10 minutes or until the potatoes are tender.

Oven Directions

  • Preheat to 425°F. Line a large jellyroll pan with aluminum foil.
  • Scatter bacon pieces and cook in oven until 3/4 done, about 15 minutes.
  • In a large bowl, toss onions, potatoes, and seasonings with oil. Spread around with bacon on the baking sheet.
  • Bake for 25 minutes. Remove from oven and carefully flip over. Continue baking another 15 minutes or so until potatoes are tender and crispy.
