While browsing the produce at my local grocer, I was trying to come up with something new to make as a side dish. Something I hoped my guys would love. We needed a shake up from the same old potato options, rice, or mac&cheese. My eyes landed on a large spaghetti squash. I’d always wanted to try one, but not being a lover of regular spaghetti with red sauce, and that being the only way I’d ever seen that kind of squash served up, I had no idea what I’d do with it. My husband gave me an “I’m afraid to know what you’re going to do with that” kind of look. Since no epiphanies came to me, I resorted to my favorite search engine and typed in spaghetti squash and side dish, clicked on “images” and scanned the pictures for any that looked like they might be super yummy. The ones with lots of cheesy goodness jumped out at me. The guys loved it and I loved it and even the dog loved it! And it was easy enough to make so it’s definitely going to become a regular during spaghetti squash  season. Spaghetti Squash Au Gratin

1 large spaghetti squash, cut in half lengthwise, seeds scooped out
1 tbsp. real butter
1 cup diced onion
2 heaping tsp. jarred minced garlic
1/2 tsp. salt (more or less to taste)
1/4 tsp. black pepper (more or less to taste)
1 cup sour cream
6 oz. grated sharp cheddar cheese
1 cup grated Romano Parmesan cheese

Preheat oven to 400°F. Line a cookie sheet with foil and lightly spray with oil. Place squash cut side down and bake for 30 minutes or until fork tender.

While squash is cooling enough to handle, sauté onions and garlic in butter until golden.

Scoop out the spaghetti squash into a large bowl. Add sautéed onions & garlic, salt, pepper, sour cream, half of both cheeses, and stir gently to combine.

Spray or butter 2 quart baking dish or a large pie plate. Pour mixture into dish and sprinkle the top with remaining cheeses. Bake at 400°F for 25-30 minutes or until lightly browned.
