While visiting my family back home last summer, my awesome sister introduced me to a new dish she whipped up for a cook-out at my Dad and step-mom’s vacation home on the Ohio River. I have no idea how/where Lauri came up with this one. She got it from our cousin Josh’s wife, Rachel! Thanks, Rachel! 😍 It’s another keeper in a long line of yummo dishes she’s presented to the family over the years.

Rachel’s Spinach & Cheese Tortellini Salad

1 bag of frozen cheese tortellini, cooked according to package directions and drained well
1 package of grape tomatoes, sliced in half long-ways
2 small green onions, chopped
1/4 head of finely chopped red cabbage
1 jar or bag of real bacon bits or pieces
Fresh shredded Parmesan cheese, as much or as little as you want
1 bag of baby spinach
1 bottle of Kraft Three Cheese Anything dressing

Run the tortellini under ice-cold water until all the heat is gone then drain well. Toss first 7 ingredients in a large bowl and drizzle the dressing over all and toss to mix. Add more dressing to taste as needed. Chill in the fridge for a few hours before serving. Double all for a large crowd.

There wasn’t a single person on the porch who wanted to spit it out. 😃

Ingredients
