Mediterranean Chicken Pitas with Avocado Sauce

Mediterranean Chicken Pitas start with tender chunks of meat marinated in a lovely herb mixture. This Greek-style “sandwich” is wonderfully flavorful and filling. Topped with Zesty Avocado Sauce and wrapped in a warm pita, it’s a refreshing change from old favorite standbys.

This fast food is kind of a cross between Greek Chicken Souvlaki and Greek Turkey Burgers. And it uses the same Zesty Avocado Sauce, but you could do Tzatziki instead. They’re both deliciously fresh and tangy with a Mediterranean flair.

Food for Thought

The Mediterranean Diet has been around for a very long time and is supposed to be the best for heart health and lowering cancer risks. In addition, eating the foods predominately consumed in the countries rimming the Mediterranean may reduce the risk of Type 2 Diabetes, obesity, depression, and Alzheimer’s. Moreover, it promotes eating a lot of things that just plain sound good for you.

“The principal aspects of this diet include proportionally high consumption of olive oillegumesunrefined cerealsfruits,[5] and vegetables, moderate to high consumption of fish, moderate consumption of dairy products (mostly as cheese and yogurt), moderate wine consumption, and low consumption of non-fish meat products.”

  • 1 lb. boneless/skinless chicken breasts
  • 4 pitas
  • 1/4 cup light olive oil
  • 1/4 cup sherry wine vinegar
  • 1/4 cup white cooking wine
  • 1/2 tsp. rosemary
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Pinch of sage
  • 1 lemon, juiced
  • Toppings:
  • Zesty Chobani Avocado Sauce
  • Tomato, diced
  • Red onion, diced
  • Baby spinach

  1. Trim all the fat and cut chicken into bite-sized cubes. Place in a gallon freezer bag or lidded container suitable for marinating. Mix chicken, olive oil, vinegar, wine, herbs, lemon juice, salt, and pepper. Seal bag or container and let marinate in the fridge for 2-3 hours.
  2. Wrap pitas in aluminum foil and heat in a 325°F oven for 10 minutes. Sauté chicken on medium-high heat until cooked through and no longer pink, about 10 minutes or so.
  3. To serve, place several pieces of chicken down the center of warm pita, add desired toppings, fold up and eat.
