Mediterranean Chicken Pitas with Avocado Sauce

Rosemary, thyme, oregano, and a few other flavorful ingredients make a lovely marinade for this Mediterranean inspired chicken. Topped with Zesty Chobani Avocado Sauce and wrapped in a warm pita, it’s a refreshing change from old favorite standbys.

Mediterranean Chicken Pitas

1 lb. boneless/skinless chicken breasts
4 pitas
1/4 cup light olive oil
1/4 cup sherry wine vinegar
1/4 cup white cooking wine
1/2 tsp. rosemary
1/2 tsp. thyme
1/2 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
Pinch of sage
1 lemon, juiced

Toppings:
Zesty Chobani Avocado Sauce
Tomato, diced
Red onion, diced
Baby spinach

Trim all the fat and cut chicken into bite-sized cubes. Place in a gallon freezer bag or lidded container suitable for marinating. Mix chicken, olive oil, vinegar, wine, herbs, lemon juice, salt, and pepper. Seal bag or container and let marinate in the fridge for 2-3 hours.

Wrap pitas in aluminum foil and heat in a 325°F oven for 10 minutes. Sauté chicken on medium-high heat until cooked through and no longer pink, about 10 minutes or so.

To serve, place several pieces of chicken down the center of warm pita, add desired toppings, fold up and eat.
