This Low Carb Meat & Veggie Summer Salad is delicious! Though it tastes like a beautiful summer day by a gorgeous lake, beach, mountain – or wherever your happy place is, it’s perfect for any holiday or potluck party. This batch is loaded with button mushrooms, black olives, cucumbers, grape tomatoes, diced ham, cubed mozzarella, and three cheese ranch dressing. I haven’t ever come across anyone who wants to spit it out. 😄

The original recipe has tri-colored rotini pasta in it, but when you really think about it, pasta is pretty much bland and tasteless until it’s sauced or dressed. Then we can’t seem to get enough of it. However, according to LiveStrong, “Your body keeps a check on blood sugar levels by releasing the hormone insulin into the bloodstream whenever blood sugar levels become elevated. Pasta made from semolina, farina and refined durum wheat flour are digested more quickly than pasta made from whole-grain durum wheat. The speed at which pasta and other simple carbs made from refined flour products are digested influences your blood sugar levels and contributes to those sugar highs and lows that deplete energy and trigger hunger. Eating these products over an extended period can contribute to obesity and damage health.”

So leave it out and add whatever veggies and meats sound great to you. The fewer the carbs, the better. The grape tomatoes in my Low Carb Meat & Veggie Summer Salad keeps this refreshing side off the ketogenic diet. I say, eat around them and voilà! It’s keto! 😃

I love making this for summer get togethers when tomatoes and cucumbers are fresh from the garden. Add broccoli and cauliflower pieces for more crunch if you’d like. The addition of good for you vitamins and minerals can’t possibly hurt. 😊

Ingredients
  

  • 2 jars Giorgio whole button mushrooms, drained well
  • 2 cans large black olives, drained well & halved
  • 1 dry pints grape tomatoes, halved
  • 8 oz diced ham
  • 16 oz mozzarella cheese block, cubed
  • 2 large cucumbers, peeled & cut into bite-sized pieces
  • 1 16 oz Kraft Three Cheese Ranch Dressing, use 2/3-3/4 of the bottle

Instructions
 

  • Mix all ingredients in a large lidded container. Refrigerate for a couple of hours before serving.

    1. I liked this salad and the other antipasti salad mixed together. It is a match made in heaven, let me tell ya! There’s lots of salt and then the cream/cucumber tames it in the best way!! Recommend!
