One of our most favorite items on Olive Garden’s menu has always been their stuffed mushrooms, so I had to come up with this crazy delicious Keto Olive Garden Stuffed Mushrooms recipe to satisfy our craving. But it had to be as low carb as possible. And here it is! At only 2g net carbs per serving, you can eat them guilt-free!

There are lots of copycat Olive Garden stuffed mushroom recipes on the net, but none I could find that are low carb and/or ketogenic. I started the FASTer Way to Fat Loss on January 6th, 2020. The first week is spent learning what to do and when in preparation for diving in the second week. I’m loving this easy to follow eating plan which focuses on the reaching macro nutrient goals based on your weight, goal weight, and realistic weekly weight loss goal. Though we aren’t supposed to step on the scales, I did. 😁

Olive Garden doesn’t use such big mushrooms, however, this is what I had on hand when I decided to give my low carb updates a try. The recipe called for 9 oz of whole mushrooms. This package was 24 oz. and I used them all – and I’m so glad I did. We loved my keto version SO much!

In this batch, I used La Banderita Carb Counter Tortillas finely ground in my mini food processor. Lavash bread is another great low carb option which I’ll try next.

Low Carb and Keto Olive Garden Stuffed Mushrooms

I have a small Oster food processor that’s perfect for recipes like this. It’s much easier to whip out from the cabinet and doesn’t take up much space on the top rack of the dishwasher.

Low Carb and Keto Olive Garden Stuffed Mushrooms

Ingredients
  

  • 24 oz whole mushrooms
  • 2 low carb tortillas or 1 whole Joseph's Lavash Bread
  • 6 oz minced clams, drained
  • 2 eggs
  • 1 tsp garlic powder
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 tbsp butter
  • 1/3 cup grated parmesan/romano cheese blend
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 stick butter, melted

Instructions
 

  • Remove stems from mushrooms and dust off any dirt. Place in a 9×13 baking dish.
  • Tear the tortillas or bread and wiz in a food processor to fine crumbles.
  • Drain the clams and add to the processor bowl, then add all the rest of the ingredients except 1/2 cup of mozzarella and 1/2 stick of melted butter.
  • Process until thoroughly combined.
  • Preheat oven to 375F.
  • Stuff each mushroom with all the mixture. Mound up if necessary. Drizzle butter over all.
  • Cover with foil and bake for 30 minutes. Remove from oven and sprinkle the remaining 1/2 cup of mozzarella on top of each mushroom. Return to oven, uncovered, for another 5-10 minutes, or until cheese is lightly toasted.
