Everyone has been affected by the COVID-19 in one way or another. Things have not gone back to normal yet. The stress of it all has made me fall off the wagon and my friend Ro from the Ketonian Nerds fell off the keto wagon too. Stress makes us want to eat. It’s called comfort food for a reason. She’s back on KETO and I am finding my way, but this ooey gooey cream cheese crumb cake definitely makes it easier because the comfort is in the taste – not in the carbs! 😀

Keto Cream Cheese Crumb Cake

Y’all, you won’t believe how incredibly moist this coffee style cake turns out. When we first started eating/baking ketogenic breads and desserts, they were pretty much awful. So dry you couldn’t hardly swallow a bite without a giant swig of whatever beverage you had at hand. With trial and error, we’ve discovered the right ingredients in the right measurements to make living a keto life doable. We know it takes more effort, but sometimes you just have to buckle down and do what has to be done to win the battle of the bulge. Our health depends on it!

Ooey Gooey Keto Cream Cheese Crumb Cake

Ingredients
  

Streusel Topping:

  • 3/4 cup almond flour
  • 1/4 cup chopped pecans
  • 1/3 cup Swerve Confectioner's
  • 1 tsp cinnamon
  • 1 stick butter, cold

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1/3 cup Swerve Confectioner's
  • 1 tsp vanilla extract
  • 1 tbsp heavy whipping cream

Cake Layer

  • 2 cups almond flour
  • 1 1/2 cup monk fruit sweetener
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 1 stick butter
  • 1 cup sour cream
  • 2 large eggs
  • 1 tbsp vanilla extract

Instructions
 

Streusel Topping

  • Preheat oven 350
  • Grease 8×8 pan
  • Combine almond flour, pecans, swerve, cinnamon. Cut in the butter w pastry blender or with a fork until the butter pieces are the size of corn. Set aside.

Cream Cheese Layer

  • Add softened cream cheese to a bowl. Mix until soft and fluffy. Add in Swerve, vanilla, and heavy whipping cream.
  • Mix until homogenized. 
  • Set aside.

Cake Layer

  • Combine all ingredients in a bowl and mix together.
  • This will be your bottom layer. Pour into your 8×8 baking dish and smooth it out.
  • Add the cream cheese layer and spread it over the bottom layer.
  • The streusel can be dropped in a pretty pattern on top with your fingers. 
  • Cover the dish with foil and bake for 30 minutes.
  • At that time, take foil off and bake an additional 20 minutes.
  • The cake will set as it cools.

This Ooey Gooey Keto Cream Cheese Crumb Cake is a cross between Culinary Craftiness’s Decadently Sweet Mini Keto Cheesecakes and Ketonian Nerds’ Keto Coffee Crumb Muffin and maybe this Ooey Gooey Pumpkin Butter Cake (minus the pumpkin). With recipes like these, we can stay on track and still feel like we’re cheating. There is no reason to deprive yourself to the point where you do cheat. Falling off the wagon is okay. It’s how you get back on that matters.

    • You definitely make baking look easy, Ro! Though I can bake, it’s not my favorite thing to do. I think my forte is casseroles – even dessert-style! Like my Dirt Pudding or no-bake Eclair Cake (recipe coming soon!).
