This Keto Cheeseburger Casserole Deluxe is one of those recipes that can be made to suit your own tastes. If you don’t have a specific ingredient, substitute what you have on hand. The first time I made it with a Mexican blend cheese it was delicious, the second time with American cheese slices, and the third with straight up mild cheddar. Today’s version has mozzarella. 😊
Deluxe for More Healthy Goodness
I love all the different versions I’ve made, but this one has to be my favorite so far. Firstly, throw on some baby spinach, onions, dill pickles, and diced tomatoes for a vitamin and mineral boost. Secondly, the big slices of fresh crimini (brown) mushrooms gave me an idea for my next Keto Cheeseburger Casserole Deluxe creation – swiss and brown gravy! Who doesn’t love a good mushroom and swiss burger like those found in restaurants! Change up the cheese (swiss is stronger so maybe use only half called for in the recipe below) and leave off the tomato, lettuce, and pickles. Don’t forget to top with a little mayo and then the gravy!
Keto Cheeseburger Casserole Deluxe
Great on its own, but outstanding turned into a cheeseburger deluxe salad!
- 2 lbs lean ground beef
- 4 oz cream cheese, full fat
- 3/4 cup sour cream, full fat
- 2 large eggs
- 16 oz shredded cheese, mozzarella or fiesta blend
- 1 med onion, diced
- 2 tbsp Montreal Steak Seasoning
- 1/2 tsp salt
- 1/2 cup real bacon bits, optional
- 16 oz fresh mushrooms, sliced, optional
Brown the onions with the ground beef until cooked through and no longer pink.
Drain the fat.
Soften the cream cheese in the microwave for a minute then and to the browned ground beef along will all the other ingredients, minus 1/2 the shredded cheese. Stir well.
Spray a 9×13 baking pan with oil. Spread cheeseburger mixture in pan. Top with remaining cheese.
Bake at 350F for 30 minutes.
Cut into 12 squares and serve with your favorite cheeseburger toppings, such as lettuce, diced tomato, diced dill pickles, mayo, mustard, and/or sugar-free ketchup
