I don’t think I’ve met a jarred pizza sauce I don’t like, but my favorite is Simply Balanced Organic Pizza Sauce found at Target, followed by Mid’s Pizza Sauce. The key to a yummy flatbread is not going overboard on the sauce. Keep it thin so it doesn’t ooze out everywhere with each bite. 😋
Whenever I’m frying bacon (a job I royally despise), I try to make plenty of extra to have on hand. Store it in the fridge in a baggy for up to a week. This pile was from Sunday breakfast – a meal I rarely ever prepare. Since the people in my house are usually working or off on adventures on weekend mornings, I do up delicious breakfast dishes for supper on a regular basis. Last Sunday was a rare event and called for bacon and Jimmie’s scrumptious scrambled eggs. Deeelish!
Back to the pizza… Do you remember the Priazzo pizza Pizza Hut had on their menu back in the 1980s? It only lasted 4 years because customers didn’t like how long it took to make. But Jimmie and I loved that pizza! It had 3 layers of crust separated by meat and lots of cheese. It was the first time I’d ever had cheddar cheese on a pizza and it gave the Priazzo a deeper, richer taste.
I don’t always use cheddar on my pizzas. It all depends on which flavor profile is calling out to me. If you’ve not tried cheddar, give it a go with a nice sharp mixed with a really good whole milk mozzarella. Add Parmesan for a truly spectacular mouthful of yum!
Three Cheese Flatbread Pizza
1/2 pkg. (3) flatout flatbreads, any flavor
1/2 jar pizza sauce
3 cups shredded mozzarella cheese
1-1/2 cups shredded sharp cheddar cheese
1 cup shredded or shaved Parmesan cheese
1 pillow pack sliced pepperoni
1-1/2 cups cooked chicken, crumbled bacon, sausage, and/or ground beef
Diced onions, green bell peppers, black olives, etc.
Preheat oven to 400°F.
Place flatbread on a baking sheet and bake for 2-3 minutes on one side. Turn over and bake for another 2-3, until stiff, but not burned. Watch closely. Remove from oven.
Spread 3 tbsp. pizza sauce to the edges of flatbread. Sprinkle on optional toppings, if desired. Evenly sprinkle on 1/3 cup Parmesan cheese, then 1/2 cup of cheddar cheese, then 1 cup of mozzarella cheese.
Bake in the oven for 10 minutes, or until cheese is melted and lightly browned around the edges. Let cool for a few minutes then cut into squares.
Serve with a nice side salad.
