Easy Sautéed Peas with Ham & Onions

These peas are so good, you might think you’re eating junk food. 😋 Several years ago, I found a recipe in an Irish cookbook for peas sautéed with bacon and shallots that became an instant hit with the husband. I was out of bacon and shallots one day, but had ham and onions aplenty and so gave it a try. Honestly, this way is easier than cutting up and cooking bacon, but both are great and this quick, easy side is now a favorite.sauteed-peas-with-ham-onions-culinary-craftiness

Sautéed Peas with Ham & Onions

1 large or 2 small bags frozen peas, thawed
1 package, diced ham
1 medium onion or 2 large shallots, thinly sliced
1-2 tablespoons light olive oil
Salt & pepper to taste

Sauté the onions or shallots in light olive oil in a medium-sized skillet over medium-high heat, stirring frequently until caramelized (3-4 minutes).

Add the ham and stir until lightly crisped (3-4 minutes or so).

Add peas, and cook until hot (3-5 minutes). Don’t overcook all the crunchiness out of them. If your peas are still frozen, pour into a pot of boiling water for 1 minute or microwave for 2-3 minutes before adding to ham and onions in pan.
