Looking for a quick broccoli casserole that doesn’t require making a cheese sauce first? This easy Crock Pot Broccoli Casserole version tastes great and can be made with or without a cracker crumb topping.

To make it with the cracker topping, you’ll need to carefully take the crock out of the heating base and put it in the oven under the broiler for a few minutes. Put it back in the crock pot base to keep the casserole warm.

This slow cooker version is perfect for large family gatherings, reunions, pot lucks, church socials, etc.

Definitely a crowd pleaser! 😊

Crock Pot Broccoli Casserole

52 oz. bag frozen broccoli
1 can evaporated milk
2 sticks butter
1-1/2 lbs. Velveeta, cubed
Salt & pepper
2 sleeves round buttery crackers, crushed (optional)
1/2 stick butter (optional)

Spray Crock Pot with cooking spray. Cut up 1 stick of butter into the bottom of the pot. Add evaporated milk. Liberally salt and pepper.

Dump in 1/2 the bag of broccoli then sprinkle with more salt and pepper. Add the rest then dot with the other stick of butter and the cubes of Velveeta. Salt and pepper.

Put the lid on and turn to high for 1-1/2 hours. Stir to incorporate the cheese, milk, and butter. If not liquidy enough, add a 1/4-1/2 cup milk. Continue cooking for another 1 to 1-1/2 hours, until broccoli is just tender and cheese sauce has thickened.

Optional: Turn the crock off and top with cracker crumbs dotted with 1/2 stick of butter cubes. Carefully remove the crock from the electric heating base with pot holders and place in oven under the broiler turned to high for 2-3 minutes, until lightly browned. Leave the oven door open enough to squat down and watch to make sure the crackers don’t burn. Carefully remove crock from oven and return to the Crock Pot base to keep warm.
