!t’s unbelievably crazy that this recipe is just now making it onto the blog. Easy Cheesy Potatoes are almost always the main side to anything we’re cooking on the grill. When they’re just fork-tender but not falling apart, drain the water. Before you pour the cooked chunks of potatoes back into the hot pot, place the cubed cheese in the bottom so the heat of the potatoes melts the cheese without having to turn the heat back on. You can sub evaporated milk for the milk or cream. Put a lid on the pot or cover with foil and let sit for 10-15 minutes. Gently turn over the potatoes using a large spoon, pulling melted cheese up from the bottom of the pot until thoroughly incorporated without smashing the potatoes. Easy Cheesy Potatoes

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 10-12 Servings

Easy Cheesy Potatoes

  • 4-5 lbs. peeled Idaho potatoes
  • Water
  • 1 1/2 lb. Velveeta, cubed
  • 1 stick butter, cubed
  • 1 cup heavy cream or milk
  • Salt & pepper


  1. Cube potatoes into 2" chunks. Cover with water by one inch above potatoes. Salt the water.
  2. Bring to a boil over high heat then reduce to medium until just fork tender, about 10-15 minutes (20-ish overall).
  3. Drain well in a colander. Dump the cheese, butter, cream, and additional salt and pepper in the bottom of the hot pot. Carefully pour the potatoes on top. Cover with lid or foil and let sit to allow the hot potatoes to completely melt the cheese.
  4. Gently stir, turning potatoes over and pulling cheese up from the bottom until all incorporated. Season further to taste.

    • Most definitely! We use the microwave for best reheating results. Sometimes the bigger potato chunks have cold spots inside. Just stir and microwave in 30 second increments until hot through and through. 🙂
