While home last fall, my sister-in-law Donna hosted a family get-together. It had been 6 years since our oldest son had been home and 3 years for the rest of the guys. One of the treats we usually have at these family socials is homemade ice cream, but that’s not what this post is about! 😄 I’ll share those recipes sometime this summer. 😎 Donna’s Cinnamon Cake is the star today. A couple of things I’ve learned about cake-making over the years

If you want your cinnamon cake or any other kind to turn out dense and super moist, use a wooden spoon and mix until just combined. Using a wire whisk will incorporate air and give the cake a some lift, and it will get all the lumps out. It’s okay to have some lumps in your batter. Using an electric mixer will make for a lighter, fluffier cake. To make your cake super moist, add more oil. To make a more brownie-like cake, use 1 less egg. Deliciously Moist Cinnamon Cake

1 box yellow cake mix
1 box instant butterscotch pudding
3/4 cup vegetable oil
3/4 cup water
4 eggs
1 tbsp. cinnamon
3/4 cup sugar

Preheat oven to 350°F. Grease & flour 13×9 pan.

Using an electric mixer, in a large bowl, beat cake mix, pudding mix, oil, water, and eggs for 3 minutes.

Mix cinnamon and sugar in a small bowl.

Spread half the cake batter in the prepared pan. Sprinkle half the cinnamon sugar over the batter. Dollop the rest of the cake batter all over and carefully spread over the cinnamon sugar. Top with the rest of the cinnamon sugar.

Bake for 30-40 minutes, until toothpick inserted in several places near the center comes out clean.

I cover cinnamon cake tightly while still warm and let the steam kind of melt the top cinnamon sugar layer. It’ll make a nice crunchy topping on a deliciously moist cake.

  1. This looks delicious. I am looking at your pictures for this cake and it looks like you sprinkle some cinnamon sugar in the bottom of the prepared pan before adding your first layer. Am I seeing that correctly – does this give the cake a cinnamony sugar crunch to the cake bottom? I’m making this cake today. Fingers crossed.
