Last Friday before grocery shopping I was racking my brain and pouring over Pinterest posts to find something new and yummy to make for lunch for a Mermaids at Heart crafting day. Roberta of Ketonian Nerds was coming over and I knew we were both going to be ready to dive into some heavenly food the minute it was time to break our individual fasts. My usual Crock Pot Breakfast Casserole (minus the potatoes) kept coming to mind for its ease and simplicity. But something altogether special happened when I combined the ingredients I had on hand. Cheesy 3-meat Keto Quiche was born!

I had these ingredients and started throwing them together. Rather than dealing with the slow cooker since we weren’t going to eat anything until 2:00 p.m. sharp, I planned to use my wonderful toaster oven. I bought it specifically because a 9×13 pan can fit in it.

Ro is on 20 hour fasts, I’m still on 14 hours. It worked out that day that we could eat at the same time! Joy of joys! We’re both foodies of the first degree and happened to have almost identical tastes. She made her crazy delicious Keto Cracka-lackin Crackers to go with my super savory Keto Green Chile Artichoke Dip. Mm mmm mmmm!

For the Cheesy 3-Meat Keto Quiche, use these three ingredients below if you want yours to taste exactly the way we adored it. All my guys loved it, too!

Cheesy 3-Meat Keto Quiche

12 cage-free, antibiotic-free eggs

2 cups shredded fiesta mix cheese

1 lb. pkg.  Eckrich Smoked Sausage, cut lengthwise then diced

1 bag Jimmy Dean Fully Cooked Original Sausage Crumbles

1 cup Smithfield Smoked Diced Ham

½ cup heavy whipping cream

½ tsp. salt

½ tsp. pepper

Preheat oven to 350F. Spray or butter a 9×13 baking dish.

Fork whip the eggs in a bowl big enough to hold everything.

Add the cheese, meats, cream, salt, and pepper. Mix well.

Pour into pan and bake for 45-60 minutes. Check the center for doneness with a knife.

Ingredients

  • 12 Eggs
  • 2 cups Fiesta blend cheese, shredded
  • 1 Bag Jimmy Dean Fully Cooked Original Sausage Crumbles
  • 1 lb Eckrich Smoked Sausage, diced
  • 1 cup Smithfield Hickory Ham, diced
  • 1/2 cup Heavy whipping cream

Instructions

  • Preheat oven to 350F. Spray or butter a 9×13 baking dish.</p>
