You usually know by the combination of ingredients in the list that the dish will probably taste pretty good. But just how delicious it turns out can be quite a pleasant shock. This is one of those recipes! Eggs so creamy bites melt in your mouth! Not at all eggy tasting, either!

Side note: I’m totally in love with my tiny temporary kitchen! My physical challenges make standing for any amount of time and walking very painful. I’ve had to use a bar stool at the stove and sink since I was a young teen. But I’d still have to hop off to gather this and that. This is the first kitchen I’ve ever had where everything is exactly where I need it to be and I can reach from one side to the other! When the new kitchen is added on, it’ll be designed with my limitations in mind, yet spacious enough for others to hang in the kitchen with me. 😊

Now, this amazing egg casserole doesn’t have to be just for people eating keto. Add a side of crispy tender hash browns, and toast with jam for a full on American breakfast. This dish would be perfect for Bed & Breakfasts, overnight guests, breakfast after glorious sunrise services, and even on restaurant menus!

Easy Keto Cheesy Ham and Egg Bites

  • 16 oz diced ham, Carolina Pride
  • 12 large eggs (free range organic if possible)
  • 4 oz light whipped cream cheese, Great Value (half container)
  • 4 tbsp salted butter, Great Value
  • 1/2 cup sour cream, Great Value
  • 2 cups fiesta blend shredded cheese, Great Value
  • 1 cup heavy whipping cream
  • 1/2 tsp salt
  • Pepper, several dashes

Using a blender or food processor, blend everything except the ham until completely combined. Hold the lid on the blender!

Pour into a 9×13 baking dish or pan sprayed with oil.

Bake at 375°F for approximately 25-35 minutes. Don’t over-bake! Jiggle the pan at the 25 minute mark to see if the eggs have set in the middle.

If serving now, add another 5-7 minutes or to your desired egg doneness.

If serving 1 at a time for your keto diet, store the entire pan in the fridge. Remove 1 serving and microwave for 20-30 seconds. The eggs will cook more during this time.
