Low Carb Bolognese Chicken Parmesan is a special treat at the end of a long week of dieting. You can make this entree much lower in carbs and it’ll still taste great, but my bolognese sauce is so delicious I had to use it on my low carb chicken parm. 😋
Low Carb Bolognese Chicken Parmesan
- 4 boneless/skinless chicken breast, butterflied in half
- 2 cups Easy Italian Bolognese Sauce or your favorite low carb/sugar free pasta sauce
- 2 cups shredded low-moisture part-skim mozzarella cheese
- 5-6 oz shredded parmesan cheese
- 2 tbsp coconut oil
Preheat oven to 375°F.
Brown the chicken breasts in the coconut oil. Place on a baking sheet sprayed with oil, and then top with a heaping tablespoon of sauce, an equal portion of the mozzarella, and then an equal portion of the parmesan cheese.
Bake for 25-30 minutes.
Serve with a side salad and roasted brussels sprouts or broccoli.
