Low Carb Ham and Eggs Casserole

Low Carb Ham and Eggs Casserole is a fluffy and delightfully tasty dish! You can make this with shredded cheese – cheddar or gouda – or leave as is for a lower calorie version. Softer cheeses such a mozzarella up the carb count per serving. Mix in fresh, chopped spinach to pump up the nutrients without adding carbs!

I must confess I sometimes add a squirt of no-sugar ketchup. I love ketchup on scrambled eggs! Other times I might add a bit of salsa and light sour cream. Mostly I just pick up a square and eat it while doing other things, like crafting. 😋

Low Carb Ham and Eggs Casserole

  • 1 doz eggs
  • 8 to 16 oz diced ham
  • 1 cup heavy cream
  • 1/2 stick butter, melted
  • 1 tsp salt, or an amount you feel is sufficient
  • 1/2 tsp pepper, same as above

Optional

  • 2 cups shredded cheddar or fiesta blend cheese
  • 2 cups fresh spinach, chopped

Preheat oven to 350°F. Spray a 9×13 baking dish with olive oil.

In a large bowl, whisk together the eggs, cream, butter, salt, and pepper.

Stir in the diced ham.

Pour into prepared pan and bake for 20-25 minutes or until eggs are set in the middle.

Serve with buttered keto sliced bread.
