Italian Fried Eggs

Italian Fried Eggs make a hearty breakfast or supper! Great for serving house guests a unique dish from the wine-dark Mediterranean Sea. Those in my house prefer eggs “over easy.” Most pictures of eggs show them “sunny side up.” You can cook these however you like them best.

My cast iron skillet is huge and I don’t have a lid for it so I cover it with a large round pizza pan when I need to trap the heat. This is how I cook my eggs on top without overcooking on the bottom. There’s really no easy way to flip these eggs without making the whole dish look a mess, but you can give it a try if you don’t need it to look like a million dollar photo shoot. 😁 (Not that my pics look professional in the least! I just don’t have time for all that. If a clean towel is at hand, I’ll try to fancy up the dish a bit. Otherwise, you’re likely to see some lovely paper plates in the photos! LOL)

All my pictures show a double batch in a 15″ Lodge cast iron skillet. The recipe is for a single batch.

Italian Fried Eggs

  • 1/2 lb bacon, cut into pieces
  • 1 can diced tomatoes, undrained
  • 1 yellow or white onion, diced
  • 8 oz white or baby bella mushrooms, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh curly parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 large eggs
  • Salt & pepper, to sprinkle on eggs

Optional

  • Any other seasonings or herbs or veggies you think will go great in this dish

Fry bacon and onions together until bacon is crisp over medium-high heat.

Stir in mushrooms, diced tomatoes, basil, parsley, salt, and pepper.

Lower heat to medium and stir occasionally, for 7-10 minutes until much of the moisture has evaporated. Have the eggs ready to carefully crack into each well.

Lower heat to low and move the stew aside to make 4 empty spots in the pan. Carefully crack and egg into each and lightly sprinkle with salt and pepper.

Cook for 3 minutes or so, until the whites are set for “sunny side up” eggs. Or cover with a lid and cook for 3-4 minutes for “over easy.” Add another minute or two for “hard” eggs.

Serve with buttered toast or your favorite crusty bread.
